Whole Wheat Rye Bread

½ cup warm water

½ tsp honey

2 tbsp dry yeast

Place in a small bowl the water and mixed well the honey add the dry yeast and mix gently cover and let stand, it will grow in size.

3 cups warm water (100 F)

4 ½ cups whole wheat flour

2 cups rye flour

1 cup vital gluten

1 tbsp olive oil

2 tbsp honey

1 tbsp or ½ tbsp salt (or less, to taste :-) )

Place in a bowl the water and mixed the honey, add 3 cups of whole wheat flour and beat vigorously about 100 strokes to develop gluten and to incorporate air in the batter, most likely by this time your yeast has risen so add it to your bowl of the flour and mix it gently about 20 strokes. Set It in a warm place to let it rise, about 30 minutes or until double in size.

Now that has doubled, add the salt and oil and mix, add the rest of whole wheat flour, ¼ flax seeds, 1/3 puppy seeds,  mix well, add 1 cup of rye flour and mix well then place it on the counter and add the  rest of your flour and the vital gluten.

Knead until smooth and elastic and springs back when pressed with fingers.

Place the dough on an oiled ceramic bowl, turn over to oil top and cover with a dry towel. Let it rise on a warm place until double in size.

Preheat your oven to 350 F now.

Now, place the dough on the counter and divide in equal amounts the dough, knead a little bit to form 2 loaves of bread and place them on a cookie sheet with a little tiny bit of PAM spray. Cover them for about 15 minutes or so and place them in the oven for 50 or 55 minutes at 350 degrees.

If you would like to use a bread machine, just add all ingredients on it :-)

If you would like to use a kitchen aid Mixer, use its bowl for the mixing process and the kneading process.

Also, instead of flax seeds, you may use sesame seeds, delicious too! Enjoy it!
